Vegan Ice Cream

Today I decided I wanted to make home-made vegan ice cream. That's my ice cream in the picture above. It came out great! Fresh strawberries off the vine are AH-MAZING. I hand picked a lot of strawberries a few days ago, and I decided to freeze the remaining ones so they wouldn't go bad. I also froze two bananas that were on their way out as well. What a great way to save fruit that would otherwise go to waste. Besides, I've never made ice cream from scratch before! It was pretty easy actually. I bought a little ice cream maker and wanted to try my hand at making a vegan ice cream blend today. Yep. Without milk and sugar to boot. If you are wondering if that is possible, yes it is! It's easy too which is always a plus with everyone's busy schedule. 

Here's what I added to the ice cream maker:
  • approximately 2 or so pints of fresh pre-frozen strawberries (70% thawed but still icy).
  • 1 Young Thai Coconut. Include the coconut water and soft flesh blended together in a blender beforehand. You can also use a can of coconut milk in place of a real coconut to save time). You can also replace with about 1.5 cups of rice milk if you prefer.
  • 2 organic frozen bananas (also about 60-70% thawed). You can add whatever fruits you like, to be honest. As long as it's cold but a little mushy it will work.
  • About 1 tablespoon of real maple syrup (you can add any sweetener you prefer). You can add more if it's not sweet enough.
  • 1.5 capful of real vanilla extract.
  • Pinch of Pink Himalayan or Celtic Salt finely ground.
  • Garnish with fresh mint leaf.
I turned the ice cream maker on and poured the above-mentioned ingredients into the mixer all at the same time from the top and let it do its magic! I also added some coconut shreds once everything started looking like ice cream. I had real ice cream in about 20-30 minutes!
Eating fresh is an excellent way to stay healthy and avoid all the added sugar, and artificial flavors and chemicals companies add to their food. I also like that it's raw! I have been incorporating a large amount of fresh and raw foods into my diet along with daily juicing. I feel that the more natural I eat, the happier and better I feel.  Try my recipe. It's super easy! Plus, there's nothing in the recipe to make your skin break out (like regular junk foods) and you will have more energy from natural sugars than processed sugar. Give it a go!
